Excellent attitude to sourcing these guys send us kill tickets indicating where the beast was from and letting us know how long its been hung for so there’s no doubt that your 35 day aged steak is what it says and has come from a local farm often one that is with in the estate!
This is where those delicious hand dived Scallops hail from, I’ve used these guys for years in most of the places I’ve worked because of the outstanding quality, consistency and ethics these are the real deal hand dived scallops and it’s a pleasure to (finally) be this close to them.
The new kids on the smokin' block! We have worked very closely with Mike to develop a unique Roxburghe Hotel product – Treacle cured smoked salmon. Factoring in an extra process and allowing the Salmon to steep in muscovite sugar and black treacle before being smoked adding a luxurious sweet “tang” to the finished article, watch this space for new and exciting collaborations.
The truest free range eggs I’ve ever had the privilege to use! I’ve been to the farm and these Chucks, ducks & Geese, wander, meander and swim at will. They have all the space they could ever need and more. The eggs are hand collected lightly cleaned and hand stamped and delivered to us (sometimes still warm).
Our main stay for this beautiful, luxurious, nectar is chainbridge honey farm. This can be found on the way to Berwick, not only do they produce honey but also a variety of lovely wax based products. But that’s not the only supply here in the Borders there is a burgeoning bee keeping society fighting the good fight of the honey bee! Where possible we support these cottage style industries buy buying what we can, this is where it gets really interesting because we get unique, individual honey that ranges from the sumptuous to the sublime.
Not so much of a food supplier more of what food gets supplied on kinda’ guy! A true artisan craftsman, lovingly creating unique and bespoke pieces of table ware from locally sourced wood, such as the Pippy Oak steak boards for the grill menu, plus a couple of other top secret projects that are being whittled on as we speak.
Another fantastic butcher who supplies our firm favourite sirloin for Sunday lunch along with the excellent bacon and sausages for the breakfast. Great businesses with a fantastic shop, again on the way to Berwick pop in and try the pies!
Working closely with Chris at the Floors castle produces our marmalade and Christmas puddings to a fantastic old recipe.
Tenancy: The tenancy will be a Short Assured Tenancy under the Housing (Scotland) Act 1988. The Lease may be renewed at the end of the prescribed term of let but applicants should be aware that possession of the property can be recovered by the proprietor at the expiry of the Lease if required.
Entry and Duration: Entry shall be at such date as may be agreed. The duration of the Lease shall be for an initial period of not less than six months.
Rent: The rent shall be payable monthly in advance by Standing Order on the 1st of each month with a proportionate amount payable on entry.
Repairs: The proprietor shall maintain the premises wind and water tight and keep in repair the structure and exterior of the house (including drains, gutters and external pipes), the installations in the house for the supply of water and electricity and for sanitation (including basins, sinks, baths and sanitary conveniences) and installations for space heating and water heating with the exception of any repairs occasioned by any act, omission or negligence of the tenant. Internal decoration shall be the tenant’s responsibility.
Painting: The proprietor shall carry out external painting.
Deposit: A deposit of two months rent will be payable on entry. This will be repaid to the tenant on termination of the lease, provided all obligations of the lease are fulfilled and the property left in a satisfactory condition.
References: The Estate will require the applicant, in the event of them finding a property that they wish to rent, to complete a Credit Check before granting them a tenancy.
Other Conditions: All the other customary Roxburghe Estates conditions of let shall apply and a copy of the pro forma Lease can be inspected at the Estate Office by bona fide intending applicants.
